Creamy Cauliflower Coconut Curry

Cauliflower a fantastic vegetable, who does not like Cauliflower !!

Cauliflower gives a lovely flavour when we cook it, no matter what recipe we try Cauliflower does justice to it.
This recipe is prepared and enjoyed in many homes, this dish is one of my family favourite.
It can be enjoyed with Rice, Roti, Dosa etc.

What makes my recipe special is the badam/almonds, when sauteed & ground with the normal masala ingredients (onion, tomatoes, ginger, garlic) gives a creamy texture.
when we add the ground coconut / coconut cream in the end, the curry has a mild sweet flavour.

Ingredients:

1 1/2 cup – Cauliflower
1 cup – Potatoes
1/2 cup – frozen peas
1 cup – Freshly ground coconut/ coconut cream
1 medium – Onion
1 medium – Tomato
1 1/2 inch – Ginger
8 cloves – Garlic
3 – 4 pieces – Almonds/badam (adding more may over power the
dish)
1/2 tsp – Saunf / Fennel seeds
1/4 tsp – Turmeric powder
1 tsp – Homemade sambhar or curry powder
1/2 tsp – Kashmiri red chilli powder
1/4 tsp – Garam Masala
Salt to taste
1 tbsp – chopped mint, coriander leaves
1 tsp – fresh lime juice
1 1/2 glass – water

Ingredients to Grind:

1 medium – Onion
1 medium – Tomato
1 1/2 inch – Ginger
8 cloves – Garlic
3 – 4 pieces – Almonds/badam
1/2 tsp – Saunf / Fennel Seeds
1/4 tsp – Turmeric powder
1 tsp – Homemade sambhar or curry powder
1/2 tsp – Kashmiri red chilli powder
1/4 tsp – Garam Masala
Salt to taste

Method :

* In a heavy bottom pan, heat oil & saute saunf, ginger,
garlic,almonds/badam, onion, add salt saute well
* Then add tomato & cook well, add turmeric & saute well, once the
veggies are cooked well transfer it to a mixy jar & let it cool.
* Then add homemade sambhar powder, kashmiri red chilli
powder, garam masala & beat it to a smooth paste.
* In the same dish add oil, ghee & pour the ground masala and
saute well, add little water from the mixy & cook well.
* Once the masala cooks well add water & when it comes to boil
add the Cauliflower, Potatoes, Peas, mix well & bring to boil.
* Close th dish with a lid and let the veggies cook for 15 minutes.
* Once the veggies are cooked add the freshly ground
coconut/coconut cream mix well and let it come to boil.
* Add salt, chopped mint, coriander & fresh lime juice mix well and
turn off heat.
* Ready to serve.
