Homemade Traditional Urad Dal Chutney Powder/Podi | Nutty Protein Nutrients Packed Chutney Powder

Chutney Powder/Podi a traditional condiment so healthy, packed with proteins & nutrients it is so good for you & tastes great too. It is prepared ahead, stored so it comes to our rescue when we are in a hurry & hungry.

This Chutney powder/podi can be eaten along with Dosa (rice pan cakes), Idlies (steamed rice cakes), Hot Rice, Rotis & even on Toast. It has to be mixed with oil/ghee (traditional ghee), made into a paste & then it is spread on Dosa/Idli/Roti/Rice/Toast & eaten. Has a nutty crunchy & mildly hot savoury flavour.

Ingredients:

  • 1 ½ Cups – Urad Dal/Uddin Bele/Split Black Gram lentil
  • ½ Cup – Poppy Seeds/Khas khas/gasagase
  • ½ Cup – Sesame Seeds/Til/Yellu
  • 1 Cup – Dry Coconut (grated)
  • 2-3 Tsp – Salt
  • ¼ Tsp – Asafoetida
  • 4 Tsp – Dry Red Chilli Powder (Good Brand Store Bought dry red chilli powder/lal mirch powder).

Method:

  • Heat a Kadai/Wok (please keep heat on low).
  • Add Urad Dal/Split Black Gram lentil & dry fry until golden brown.
  • Once it has turned golden brown turn off heat, transfer into a bowl & let it cool.
  • Once it is cool transfer it into a blender/mixy jar & beat it to coarse powder (it should be sooji/semolina like consistency).
  • Transfer it to a big bowl & set it aside.
  • Heat the kadai/wok again.
  • Add poppy seeds/khas khas & dry fry until slightly golden brown.
  • Once it has turned golden brown transfer into a bowl & let it cool.
  • Heat the kadai/wok.
  • Add sesame seeds/til & dry fry it until slightly golden brown.
  • Once it has turned golden brown transfer into a bowl & let it cool.
  • Heat the Kadai/wok again.
  • Add dry coconut (grated) & dry fry until slightly golden brown (it takes a few seconds).
  • Turn off heat & transfer it to a bowl & let it cool.
  • Add the poppy seeds, sesame seeds, dry coconut & asafetida into a blender/mixy jar & beat/grind to coarse powder (make sure it has cooled completely before grinding).
  • Now add this mixture to the Urad dal/ Split Black Gram lentil powder we prepared & set aside earlier.
  • Mix both the ground mixtures together well (if the consistency is coarse then we will get a crunchy texture).
  • Add salt mix well.
  • Finally add dry red chilli powder & mix well (the quantity given is moderate in heat you can taste & add to your preference).
  • As we mix we can taste & add chilli powder to our preference (it may taste hot when added but the heat mellows down as the chilli powder blends with the other ingredients).
  • Traditionally it is served with ghee, mixed into a paste & then served as side or condiment (Sprinkle sugar for a hot n sweet flavour).
  • This quantity gives about half Kilograms of chutney powder/podi.
  • Store it in an air tight container & it keeps well for upto 3 weeks.
