Masala & Pepper Stir Fry Rice with leftover Rice – Indian Style

A Quick Easy Simple Masala Stir Fry Rice with leftover rice recipe is a helpful idea if you have not come across this kind of recipe before.

Folks who prepare rice often go through this thought when we have leftover rice, that how do we make use of leftover rice in the most effective way so we don’t feel that we are wasting food. In my community we usually prepare a quick simple stir fry rice the next day for breakfast or along with a main breakfast dish.

I am sharing two types of recipe: 1. Masala Stir Fry Rice – A simple stir fry with simple everyday ingredients & tastes good too. 2. Pepper Stir Fry Rice – A much more-simple stir fry rice with pepper, we usually eat it with pickle or leftover curry. They are quick to make as we all have our busy morning routine & we would want a quick dish to prepare. This is one such dish that you could try.

Ingredients:

1.Masala Stir Fry Rice:

  • 2 Cups – Cooked Rice (I use Sona Masoori Rice)
  • 2 Tsp – Oil
  • ½ Tsp – Mustard Seeds
  • ¼ Tsp – Jeera/Cumin
  • 2-3 Pinch – Asafoetida/Hing
  • 1 Heap Tsp – Chana Dal (split chickpeas)
  • 1 Heap Tsp – Urad Dal (split de-husked black gram lentils)
  • 1 – Green Chilli
  • 2 – Dry Red Chillies
  • 8-10 – Curry Leaves
  • 1 – Medium Onion
  • 1 – Medium Tomato
  • 3-4 Pinch – Turmeric Powder
  • 1 Tsp – Homemade Sambhar/Curry Powder (Instead you can add – ½ tsp- chilli powder, ½ tsp- coriander powder, ¼ tsp- cumin powder, ¼ tsp- pepper powder & 3-4 pinch- fennel/saunf powder)
  • 1 Tsp – Salt

2.Pepper Stir Fry Rice:

  • 2 Cups – Cooked Rice (I used Sona Masoori Rice)
  • 2 Tsp – Oil
  • ½ Tsp – Mustard Seeds
  • ¼ Tsp – Jeera/Cumin
  • 2-3 Pinch – Asafoetida/Hing
  • 1 Heap Tsp – Chana Dal (split chickpeas)
  • 1 Heap Tsp – Urad Dal (split de-husked black gram lentils)
  • 1 – Green Chilli
  • 1 – Dry Red Chilli
  • 8-10 – Curry Leaves
  • 1 – Medium Onion
  • ¼ Tsp – Turmeric Powder
  • 1 Tsp – Salt
  • ½ Tsp – Coarse Pepper powder

Method:

1.Masala Stir Fry Rice:

  • Heat a wok/pan & add oil (please keep heat on low).
  • As oil heats up add mustard, jeera/cumin & as it starts to crackle.
  • Add asafoetida, chana dal, urad dal & sauté well.
  • Then curry leaves, green chilli, dry red chillies & sauté (the chillies quantity gives moderate heat).
  • Now we add onion, salt & sauté, we cover with lid & cook until onion turn soft & translucent (please turn heat to medium).
  • We add tomato & sauté, we cover with lid & cook until tomato has turned soft & cooked.
  • We add turmeric powder, homemade sambhar/curry powder & sauté well.
  • Now we add the cooked rice & mix (mix with a silicon or wooden spoon/spatula, turn heat to medium low or low).
  • Mix well, cover with lid & we let rice heat through completely.
  • After few minutes open lid & once rice has heated through completely.
  • Turn off heat & Ready to Serve.

2.Pepper Stir Fry Rice:

  • Heat a wok/pan & add oil (please keep heat on low).
  • As oil heats up add mustard, jeera/cumin & as it starts to crackle.
  • Add asafoetida, chana dal, urad dal & sauté well.
  • Then curry leaves, green chilli, dry red chilli & sauté.
  • Now we add onion, salt & sauté, we cover with lid & cook until onion turn soft & translucent (please turn heat to medium).
  • Add turmeric powder & sauté.
  • We add the cooked rice & mix well (please turn heat to medium low or low).
  • We cover with lid & let rice heat through completely (you can also add freshly grated coconut or roasted peanuts, about 2 tbsp).
  • After few minutes we open lid & once rice has heated through completely.
  • Turn Off heat.
  • Add pepper powder mix well.
  • We cover with lid & let it sit for few minutes.
  • After few minutes it is Ready to Serve (we usually eat this rice with pickle or leftover curry).
