Healthy Masala Carrot Roti/Chapati | Masala Carrot Cheese Roti Triangles

A healthy lunch box dish, snack, finger food for kids. Masala Carrot Roti/Chapati is a delicious dish, made from whole wheat flour & mixed with sautéed carrot, onion, green chilli, ginger, nigella seeds/kalonji (gives a lovely refreshing crunch), rolled into rotis & cooked on a griddle.

Soft bites with sautéed masala flavour, they go great with spicy pickle, raita or any curry. To make it fun for the kids we add cheese on the rotis as they cook & then fold it, cut it into triangles & serve it with ketchup etc.

Do try this recipe, it is enjoyed by all but kids love it more, especially when we add cheese & serve. A great way to encourage kids to eat veggies too.

Ingredients:

  • 2 Cups – Whole Wheat Flour / Atta (we use same cup to measure carrot)
  • 1 Cup – Carrot (grated)
  • ½ of Medium Onion or 1 small Onion (finely chopped)
  • 1 Tsp – Ginger (grated)
  • 2 Tsp – Oil
  • ½ Tsp – Kalonji/Nigella seeds (slightly similar to cumin in flavour)
  • 1 1/2 Tsp – Salt (1 Tsp salt to sauté carrot masala & ½ Tsp salt for the dough)
  • 1 Tsp – Green Chilli (finely chopped, this quantity gives less heat)
  • ¼ Tsp – Turmeric Powder
  • 1 Tbsp – Fresh Coriander Leaves (finely chopped)
  • ¼ Cup – Water
  • Ghee & Oil as required (to apply on rotis)
  • Mozzarella Cheese (as required)
  • 1 Slice – Cheddar or any sharp Cheese (1 slice cheese per roti)

Method:

  • Heat a wok/kadai add 2 tsp oil (please keep heat on low).
  • As oil heats add kalonji/nigella seeds, as it crackles add grated ginger & sauté.
  • Add green chilli, 1 Tsp salt & sauté.
  • Now add onion & sauté.
  • Cover with lid and cook until soft & translucent.
  • Add turmeric powder & sauté.
  • We add grated carrot & sauté (please turn heat to medium-low or medium).
  • Sauté for about 2 minutes until carrot turns soft & then turn off heat.
  • Add chopped coriander & mix.
  • We let it cool slightly.
  • In a wide bowl add whole wheat flour & the sautéed carrot mixture.
  • Add ½ Tsp salt & mix both together nicely (rub the flour & carrot mixture with fingers for even mixture, they turn into crumble).
  • We add water (1/4 Cup) little by little & knead into soft dough.
  • We knead the dough really well until it is smooth & soft (use knuckles & palm to knead the dough).
  • Since there is moisture in the carrot mixture no need to add more water, as we knead the dough comes together.
  • Once the dough is smooth & soft we cover with lid & let it sit for 10-15 minutes.
  • After the said time we prepare to divide the dough & roll into rotis.
  • In a wide cup we add ¼ cup whole wheat flour & ¼ cup plain flour, mix well (we use this flour mixture to dust as we roll rotis).
  • We divide the dough into two then roll into log & make equal parts (to the size of golf balls).
  • We take one part & pat it into the dry flour mixture & roll into roti.
  • As we roll we dust little dry flour so they do not stick as we roll.
  • Once we make the roti we transfer it into a hot griddle & cook it.
  • We drizzle oil around the roti & let it cook.
  • After a few seconds we flip the roti & apply oil on the roti.
  • After few more minutes we flip again & apply oil on this side too.
  • Once they turn light brown we apply ghee on both sides & take it off heat, place it on a plate.
  • If you are preparing the rotis to eat later or pack for lunch etc you will need to add more oil/ghee so they stay soft.
  • We roll & cook all rotis the same way.
  • For the cheese roti, we cook the roti on the griddle, when the roti is slightly cooked on one side we flip, we add cheese on the cooked side & fold the roti.
  • We heat it through both sides & apply ghee on both sides so they stay soft.
  • We take it off heat & ready to serve.
  • We cut the cheese roti which is half circle in shape into triangles.
  • We serve it with ketchup.
